Characteristic
Brewed using 100% Yamagata sake rice Dewa Sansan and two types of yeast developed in Yamagata Prefecture. The first, YK2408, is known as a high-malic-acid yeast that produces a generous amount of malic acid, giving the sake a refreshing acidity. The second, YK0107, has been in use since 1991 and is a highly aromatic yeast that generates abundant fragrance while maintaining a low alcohol content and a clean, pleasant flavor.
