Niida Honke – Natural Sake from Fukushima Founded in 1711, Niida Honke is a sake brewery in Fukushima, Japan, with over 300 years of history. It is currently run by the 18th-generation owner and brewmaster, Mr. Yasuhiro Niida, who graduated from the Department of Fermentation Science at Tokyo University of Agriculture. Continuing his family’s legacy, he leads the brewery with a deep respect for nature and tradition. Niida Honke is committed to using only rice grown through natural farming methods—completely free of pesticides and chemical fertilizers—to craft their “Natural Sake.” By collaborating closely with local farmers, they help expand the number of pesticide-free, fertilizer-free rice fields throughout the prefecture, protecting Japan’s rice-growing environment for future generations. Since the 18th generation, the role of brewmaster has been carried out by members of the Niida family themselves.
