White kidney bean (Phaseolus vulgaris L.) is a legume from the genus Phaseolus, named for its kidney-like shape. In 1971, research discovered that white kidney beans contain a large amount of a special protein — α-amylase inhibitor, which is the key active component in white kidney bean extracts. Among approximately 27,000 species of beans, Phaseolus vulgaris contains the highest concentration of α-amylase inhibitors.
